Cuban classic — white rum, fresh lime, mint and sugar over crushed ice, topped with soda.
Chef's Notes
Muddle mint gently — pressing too hard releases bitter chlorophyll from the stalks. Use fresh lime only.

Add fresh mint leaves, lime juice and sugar syrup to the glass. Muddle gently — press to release aroma, not to pulverise the mint.
💡 Over-muddling makes the drink bitter and green.
Add rum, fill the glass with crushed ice and churn briefly with a bar spoon.
Top with soda water and stir once. Garnish with a fresh mint sprig and lime wheel. Serve with a straw.
