The Basque country's legendary two-ingredient drink — equal parts red wine and cola over ice. Bold, slightly sweet and dangerously sessionable.
Chef's Notes
Use a full-bodied, tannic red (Rioja or Tempranillo works perfectly). Ice is essential — without it the cola goes flat too quickly. Never stir; let it self-mix as you pour.
Full-bodied, tannic — cheap is fine
Well chilled, poured last
Fill a large glass or wine glass generously with ice cubes.
Pour in red wine, then cola slowly down the side of the glass to preserve carbonation.
💡 Equal parts — 125ml each. Don't stir; the pour does the mixing.
Garnish with a lemon wheel or leave ungarished. Serve immediately.
💡 Serve cold and fresh — the ice dilutes quickly so have the cola very cold.
